The healthiest way to eat kale is steamed.

The fiber-related components in kale do a better job of binding together with bile acids in your digestive tract when they’ve been steamed.

Their report appears in the Aug. 28 issue of Nature. Antioxidants gobble up free radicals, destructive molecules that are implicated in heart disease and other ailments. “Our findings indicate that milk may interfere with the absorption of antioxidants from chocolate … and may therefore negate the potential health benefits that can be derived from eating moderate amounts of dark chocolate.” Translation: Say “Dark, please,” when ordering at the chocolate counter.     I hear so much about the benefits of raw, I am somewhat surprised and pleased to see that Kale is best eaten steamed. Thanks for the blog. I loved the last benefit of all three of these foods.
